Daylesford Cider produce a range of craft ciders predominantly using select heritage cider apples grown organically on the farm, alongside other locally sourced fruit. It is the heritage cider apple varieties planted in 2003 which offers Daylesford Cider a point of difference in the Australian cider market place. These now highly sought after apples bring depth, tannins and structure to the drink that is rarely achieved when using only table/dessert apples.
The choice to follow traditional fermenting techniques, to use a range of wild and cultured yeasts, and to vary ageing processes, also adds complexity, character and difference to the ciders. Since Mackie & Clare bought the business in 2015, their dedication to their brand and commitment to producing traditional craft cider has won them a number of awards every year across their range of ciders. The English-style Tavern cellar-door, set in landscaped gardens next to the organic North orchard, is 5 minutes drive east of Daylesford. The bar is open every day offering tastings, drinks and take-away ciders. Their restaurant is open Friday through to Monday, with a relaxed spring/summer menu of wood fired pizzas and a hearty seasonal a la carte menu during the cooler months. They also host live music, private functions, events and weddings throughout the year.
